Introducing my husband’s “new favorite pasta dish” AKA my tomato mascarpone sauce with bucatini. This dish is SO good – it’s creamy but still has the base of tomato sauce that I absolutely love. Topped with basil – it might just be MY new favorite pasta dish. Recipe can be found below, enjoy!

Ingredients
- 1/2 box of pasta – I prefer bucatini!
- 1/2 onion, diced
- 6 garlic cloves, minced
- 1 tsp Italian seasoning
- 4 tablespoons of mascarpone
- 10 burst cherry tomatoes, halved
- 1/2 cup of chicken broth
- 3 tablespoons of tomato paste
- 1 tablespoon of basil, chopped
- Salt, pepper, parmesan & basil to top
Directions
Heat olive oil over medium heat. Add onions, garlic and Italian seasoning and cook until fragrant. Add cherry tomatoes and cook for approximately 5 minutes and season with salt. Add tomato pasted mix, then add chicken broth and allow the sauce to simmer for 5-10 minutes. Add salt, pepper and basil. Add mascarpone and mix well.
Once pasta is al dente, add directly to pan with a splash of pasta water and allow the pasta to finish cooking in the sauce. Season as needed with salt. Top with parmesan and basil and enjoy!
